For a long time, everything revolved around bread. Providing more than half of people's daily calories, bread was the life-source of Europe for centuries. In the middle of 19th century, a third of household expenditure was spent on bread. Why, then, does it only account for 0.8% of expenditure and just 12% of daily calories today?
In this book, Peter Scholliers delves into the history of bread to map out its defining moments and people. From the price revolution of the 1890s that led to affordable and pure white bread, to the taste revolution of the 1990s that ushered in healthy brown bread, he studies consumers, bakers and governments to explain how and why this food that once powered an entire continent has fallen by the wayside, and what this means for the modern age.
From prices and consumption to legislation and technology, Scholliers shows how the history of bread has been shaped by subtle cultural shifts as well as top-down decisions from ruling bodies. From the small home baker to booming factories, he follows changes in agriculture, transport, production and policy since the 19th century to explain why bread, once the centre of everything, is not so today.

Co-operatives provide a different approach to organising business through their ideals of member ownership and democratic practice. Every co-operative member has an equal vote regardless of his or her own personal capital investment. They take a variety of different forms, including consumer co-operatives, agricultural co-operatives, worker co-operatives and financial co-operatives.
Patmore, Balnave and Marjanovic provide a perspective on Australian co-operative development within a conceptual framework and international context since the 1820s by exploring the economic, political and social factors that explain their varying fortunes. Drawing upon the Visual Historical Atlas of Australian Co-operatives, a significant database of Australian co-operatives and a variety of historical sources, this book provides a detailed historical analysis of their development, from their inception in Australia to today. Australian co-operatives were heavily dependent on state sympathy for their growth and vulnerable to ideas that challenged collective organisation such as Neo-liberalism. Despite these challenges, the co-operative business model has persisted and since 2009, there has been resurgence of interest and organisation that may provide a platform for future growth.
A useful resource for practitioners, students, educators, policy makers and researchers that highlights a significant alternative business model to the Investor-Owned Business and state enterprise.

A masterful account of the global Cold War's decisive influence on Soviet economic reform, and the national decay that followed.
What brought down the Soviet Union? From some perspectives the answers seem obvious, even teleological-communism was simply destined to fail. When Yakov Feygin studied the question, he came to another conclusion: at least one crucial factor was a deep contradiction within the Soviet political economy brought about by the country's attempt to transition from Stalinist mass mobilization to a consumer society.
Building a Ruin explores what happened in the Soviet Union as institutions designed for warfighting capacity and maximum heavy industrial output were reimagined by a new breed of reformers focused on "peaceful socioeconomic competition." From Khrushchev on, influential schools of Soviet planning measured Cold War success in the same terms as their Western rivals: productivity, growth, and the availability of abundant and varied consumer goods. The shift was both material and intellectual, with reformers taking a novel approach to economics. Instead of trumpeting their ideological bona fides and leveraging their connections with party leaders, the new economists stressed technical expertise. The result was a long and taxing struggle for the meaning of communism itself, as old-guard management cadres clashed with reformers over the future of central planning and the state's relationship to the global economic order.
Feygin argues that Soviet policymakers never resolved these tensions, leading to stagnation, instability, and eventually collapse. Yet the legacy of reform lingers, its factional dynamics haunting contemporary Russian politics.

This book seeks to contribute a multi-dimensional, multi-layered and gendered approach to the illicit economy in the historiography of early modern Europe.
Using original source material from several countries, this volume concentrates on a border and transnational area-approximately the Lyon-Geneva-Turin triangle-located at the heart of European trade. It focuses on three products-salt, cotton and silk-all of which fuelled the black market between the last decades of the seventeenth century and the French Revolution. This volume offers an original contribution to wider studies of smuggling, illicit markets and women's economic roles by taking into account the economic life of remote mountain communities and industrious cities.
Showing that irregular practices were a structural characteristic of early modern economies, it provides insight into the opportunities offered to women in a highly flexible economy where licit and illicit activities were intermingled in a very complex way.
This research monograph is aimed at a historical audience and constitutes a useful resource for students and scholars interested in gender history, social and economic history, urban history and French studies.

Money, Warfare and Power in the Ancient World offers twelve papers analysing the processes, consequences and problems involved in the monetization of warfare and its connection to political power in antiquity. The contributions explore not only how powerful men and states used money and coinage to achieve their aims, but how these aims and methods had often already been shaped by the medium of coined money - typically with unintended consequences. These complex relationships between money, warfare and political power - both personal and collective - are explored across different cultures and socio-political systems around the ancient Mediterranean, ranging from Pharaonic Egypt to late antique Europe.
This volume is also a tribute to the life and impact of Professor Matthew Trundle, an inspiring teacher and scholar, who was devoted to promoting the discipline of Classics in New Zealand and beyond. At the time of his death, he was writing a book on the wider importance of money in the Greek world. A central piece of this research is incorporated into this volume, completed by one of his former students, Christopher de Lisle. Drawing on unpublished archival material, this volume compares Moravian economic practice in three different mission-settings, to demonstrate how Moravian practices evolved during the 18th century as part of a globalizing world and economy. Delivering in-depth analysis of the far-reaching and deep seated effects of missionary activity on indigenous communities and social relations, it explores how different economic contexts had an impact on the missionaries' relations with Indigenous and slave-populations in empire.
Petterson provides an insight how the missionaries worked, lived among various non-European peoples, and how they organised themselves and their surroundings at a time of changing identities and socio economic change. Analysing how missionary practice developed over this period, it also demonstrates how the Moravian leadership's priorities and how this affected attitudes to non-European peoples on the ground. Standing outside of national and imperial boundaries, and ambivalent about the political notion of imperialism as well as colonisation itself, Moravian missionaries nonetheless functioned in parallel with colonial structures, and were part of a broadly culturally colonial mission. So, even on the outskirts of imperial organisation, they were often a crucial part of colonial practice and took part in normalising capitalist relations in many-but not all-settings, as this book demonstrates.

This volume assembles documents that illustrate the changing structure of the British publishing industry in the nineteenth century. It charts the increasing separation of the functions of printing, publishing and retailing in the production and distribution of books, and the emergence of new economic models of publishing. For most of the period the book trade operated on a shortage of capital, depending upon fragile networks of credit and debt which could lead, as in the financial crisis of 1825-6, to the collapse of many businesses. The volume documents how the structures of the industry impacted upon the pricing structure of books and periodicals and charts the slow emergence of a mass-market for print. Major points of contention such as the 'taxes on knowledge' and the battle over legal deposit are traced, along with recurring debates over discounting and underselling. The volume focuses on key moments such as the controversy over free trade in the 1840s and 1850s and the debates over price protection which led to the formation of the Net Book Agreement in 1900.

This volume brings together key documents covering technologies of production that affected the British publishing industry during a significant period of change. It focuses in particular on key source material related to industrialisation of print production, which saw major leaps forward as mechanised innovations increased the speed, efficiency and delivery of texts through the production process. The introduction of iron, steam and other forms of rotary power presses improved the output of the print room over the century. Alongside this came improvements in typesetting and associated tasks, with the adoption of linotype and monotype casting machines. Changes in available methods of reproducing illustrations such as the development of lithographic printing processes and, in the second half of the century, photographic processes such as half-tone and photogravure, enabled wider incorporation of illustrations into periodicals and books. Such technological changes also fed organisational changes within the print and publishing trade. National unions for the print trade were established in the middle of the century to adapt to new working conditions, and engaged in robust debates about technology and its effect in the workplace.

The enormous expansion in the scale and variety of the marketplace for print after 1815 provided new opportunities for authors and prompted debates over intellectual property and the working relations between authors and publishers. The volume documents the impact of these changes on the publishing industry and its markets, focusing on key moments such as the emergence of the professional literary agent in the late 1870s and the formation of the Incorporated Society of Authors in 1883. It also includes key contemporary material related to copyright and intellectual property, which were major battle grounds affecting nineteenth-century textual circulation, author/publisher relations, financial sustainability, competitiveness in international markets, and industrial relations. The British publishing industry's attempts to control piracy and unrestricted circulation of their titles in the US and elsewhere found expression in a number of pressure campaigns, formal government commissions, legal acts, and contributions to public debate through journal articles, pamphlets, speeches, and newspaper accounts, of which a representative selection are featured in this volume.
